Caramelized Onion Soup

2 Portions

Ingredients

25 grms Butter

3 lrg Spanish Onions peeled and thinly sliced

1 tbsp super fine sugar

2 clv Garlic crushed

150 mls Dry white wine

600 mls Chicken or vegetable stock hot

1 tbsp Worcestershire sauce

1 tbsp Brandy

Method

1. Melt the butter in a large pan and add the sliced onions. Sprinkle

with the sugar and cook over a medium heat for 10-12 mins

stirring frequently until you get a lovely caramel-brown tinge to

your onions. Add the garlic and cook for a further 30 seconds.

2. Pour the wine into the pan and cook vigorously for 1-2 mins. Stir

in the stock and the Worcestershire sauce and bring to the boil.

Reduce the heat and allow to simmer for 15-20 mins until the

onions are tender. Stir in the brandy and divide between the bowls.

Serve topped with slices of French bread.
