Crab Chowder

6 Portions

Ingredients

2 tsp Sunflower oil

100 grms Rindless thick cut bacon cut into small pieces

25 grms Butter

1 sml Onion finely chopped

2 tbsp Plain flour

1.2 lts Full fat milk

2 med Potatoes about 200 grms peeled and diced

1 Bay leaf

175 grms White crab meat

125 mls Double cream

1 pnch Cayenne pepper

2 tbsp Chopped parsley

Method

1. Heat the oil in a saucepan then add the bacon and fry until golden

over a medium heat then add the butter and the onion and cook gently

for 5 mins or until softened.

2. Stir in the flour and cook for 1 min then add the milk and mix well add

the potato and bay leaf and allow to simmer for 10 mins until the potato is

tender.

3. Remove the bay leaf and add the crab and cream simmer for 1 min then

season with the cayenne salt and black pepper finish with the parsley and
