1/2 RED ONION CHOPPED

2 INCH PEELED GINGER SLICED

4 CLV GARLIC CRUSHED

3 LTR FISH STOCK

11/2 CUPS CORIANDER

1 PNCH SAFFRON THREADS

4 WHITE PEPPERCORNS

4 CORIANDER SEEDS

2 TBSP FISH SAUCE

500 MLS TOMATO WATER

GARNISH

2 TOMATOES DICED

1 RED CHILLI DICED

4 LIME LEAVES SHREDDED

60 GRMS CRAB MEAT

1/4 CUP CORIANDER LEAVES

11/4 CUP MINT LEAVES

METHOD

1 MIX THE LEMON GRASS, TOMATOES CHILLI

ONION AND GINGER.

2 BRING THE FISH STOCK TO THE BOIL AND ADD

ALL THE SOUP INGREDIENTS EXCEPT THE FISH

SAUCE AND TOMATO WATER, REDUCE THE

HEAT AND SIMMER FOR 45 MINS THEN STRAIN

THROUGH A FINE SIEVE, DISCARD THE SOLIDS

AND REHEAT THE LIQUID5 ADD THE TOMATO
